Fruity curry with peach

The peach is a fruit rich in water and nutrients and captivates with an intense aroma. They are therefore ideal flavor carriers in Ayurvedic cuisine. Peaches contain a lot of calcium, potassium and magnesium, as well as significant amounts of zinc, manganese and selenium, which we need for healthy skin and are indispensable in cell metabolism. Peaches provide us with these vitamins: vitamin A, vitamin C and B1, B2 and B3. Caratinoids have a significance as provitamin A and perform an important task as antioxidants. Also for caratinoids it is better to take them in combination with other food components than to take them in concentrated form as a food supplement.

For this recipe you will need

3 ripe peaches (pressure test)
100 ml of water
1 tbsp. ghee, or alternatively clarified butter
1 pinch of cinnamon
1 tsp. cumin
1/2 tsp. turmeric
1 pinch of chili powder
1 pinch each of ground cloves, anise, ginger powder, fennel
100 ml sweet cream (30%)
1 1/2 tbsp. coconut blossom sugar
zest of half an untreated lemon and 1 tsp. lemon juice
salt to taste

Blanch the peaches briefly in hot water, then peel off the skin, pit and then cut into bite-sized cubes. Those who like it can benefit from the good ingredients of the furry skin. In this case, the peach should not be skinned. Heat the ghee (clarified butter) in a pan and fry the spices in it until the aroma develops. Now add the coconut blossom sugar and the peach and deglaze with water. Let it simmer for a short time. By the way, the spices on the basis of turmeric form the curry. You are welcome to spice up the dish with ready-made curry powder. Season the curry with a little salt. Finally, add the cream and let the dish simmer for at least 5 minutes on low heat.

You can achieve similar results if you vary this curry with papaya, honeydew melon or banana.
