Fragrant rice or basmati rice with berriemix

For 2 people

Berries contain many essential vitamins, minerals and trace elements. In combination with the secondary plant substances (flavonoids, tannins, dietary fibres, antioxidants, etc.), we should also appreciate them for their health benefits.

For this recipe you will need

100 g fragrant rice or basmati rice
400 g mixed berry fruits
2 tbsp. ghee (alternatively clarified butter)
1 pinch of salt (we recommend rock or primal salt)
3 tbsp. brown sugar or coconut blossom sugar
approx. 4 cups water (for the rice)
1 pinch of ground saffron or alternatively 1 pinch of turmeric
1 pinch of cinnamon
if necessary, some chopped fresh mint leaves

First, put on the rice water. We recommend spring water or still water with little lime.
Then wash the berries thoroughly. Heat clarified butter or ghee in a pan. The brown sugar is added and carefully melted. Gently simmer the berries in the melted sugar for about 5 minutes. The berries may still be firm to the bite. Finally, we add the cinnamon and put everything to one side – to infuse.

Add the washed fragrant or basmati rice to the lightly salted, now hot water. Add turmeric or saffron to the cooking water. In this way you will achieve an appetising, sunny yellow colouring of the rice. It is important that the rice boils in the water for at least 5 minutes. After this time, set the rice aside to swell. It can be further processed as soon as the water has been completely absorbed by the rice. Fold the rice into the berry mixture and serve immediately.

Variation suggestion:
Feel free to spice up the rice with a tablespoon of sour cream and/or decorate with freshly chopped mint leaves. This rice dish also works with pieces of ananas or mango.
