Apple-Papaya Chutney

For 2 people
Papaya is a fruit very rich in vitamin C. Potassium, calcium, phosphorus and the natural provitamin A are also found in this healthy exotic. With papain, papaya contains a protein-splitting enzyme. For this reason, papaya can also be used as a natural tenderizer. Papaya supports digestion and can also be used as a mild laxative for mild constipation.
The apple-papaya chutney smells wonderful and is a taste revelation. This comes from the special combination of spices and fruity fruits. It is a delicious accompaniment to vegetarian dishes such as porride. However, it is also a good choice for light meat and fish dishes.

For this recipe you need
1 small green apple
1 small papaya
½ cup water
1 tsp. lime juice
50g raisins
1 tbsp. ghee (or clarified butter)
1 tsp. ginger root (very finely diced)
1 pinch of cloves
1 pinch of chili powder
1 pinch of tonka bean powder
1 pinch nutmeg
2 pinches of cinnamon
⅓ tsp. ground star anise
1 tsp. brown sugar or coconut blossom sugar

Peel dice and core the apple and papaya We recommend green apples that are not too sweet for this recipe. Place the diced fruit and raisins in a deep bowl and drizzle the lime juice over them, pour in water.
Heat the ghee in a saucepan and fry finely chopped fresh ginger root just briefly until hot, then reduce heat slightly. Add the spices over a gentle heat and toast along with them. Then add the brown sugar (or coconut blossom sugar) and the three-quarters amount of diced fruit. Mix everything well and simmer on low heat for 10 minutes. Then add the remaining fruit and simmer for another 2 minutes. Then serve.

Variation suggestion
A pear can be used instead of the apple. And for papaya and raisins, bananas and pineapple are conceivable.
