Apple chutney

For 2 people

Eat an apple on going to bed, and you’ll keep the doctor from earning his bread.

Apples are one of the most popular fruits in the world. As if we intuitively know about the many positive effects of an apple. The vitamins and minerals are to a large extent in the skin and therefore we should eat them. Apple pectin, for example, which we also find in the skin, belongs to the water-soluble dietary fibers and is good food for our intestinal bacteria. The intestinal bacteria turn it into short-chain fatty acids. Thus, apple pectin helps lower cholesterol and normalize blood pressure. It also soothes the stomach. Therefore, a grated apple is also very suitable for breaking the fast.

For this recipe you will need
3 large apples
1 tbsp. ghee or clarified butter
2 tbsp. brown cane sugar or coconut blossom sugar
500g spinach
1 onion
1 clove of garlic
½ tsp. star anise, ground
¼ tsp. allspice, ground
¼ tsp. ginger, ground
¼ tsp. cardamom, ground
¼ tsp. fennel seeds, ground
¼ tsp. cinnamon, ground
¼ tsp. chili powder
1 pinch salt

Preparation
We recommend using green apples. They are a little less sweet than red apples, but that’s where their health advantage lies. The apples are cleaned, quartered and cored. Then they are divided into coarse cubes. Ghee or clarified butter is put into a pot and heated. Then the spices are added and lightly roasted.
On low heat, the apple pieces are added and cooked for 15 minutes. Season with salt to taste.

Variation suggestion:
a) roast a handful of walnut kernels as well and add pomegranate kernels in addition. You will get some crunch this way.
b) if you are a friend of spicy chutneys, then we recommend adding 1 small chili pepper and a little more ginger powder to the spice roast. To refine you can use lime peel abrasion or a little pomegranate juice.
